Chef Luis boasts an extensive culinary background, with his career spanning over a decade and with experience in France, Mexico, and the Philippines. He is responsible for the development of all menus and production of all the food spanning across Discovery Primea’s restaurants, banquet functions, and other outlets.
A holder of a degree in Culinary Arts and Hotel Management from L’Institut Paul Bocuse in Lyon, France, Chef Luis apprenticed at the Auberge et Clos de Cimes, a three-star Michelin Guide establishment in Lyon, France.
He continued to hone his culinary knowledge and skills with each engagement, including the Intercontinental Hotel, Soleil Moderne Café, Crowne Plaza Galleria Manila, Illustrado Restaurant, as well as being Chef Instructor at the Henry Sison and CCA Manila Culinary Schools.
“The Mediterranean Diet is known for its health benefits, without sacrificing flavor. We aim to delight our guests with a gourmet and healthy alternative to the usual buffet experience,” he says.
Restaurant Tapenade opens during lunch and dinner and features an abundant spread of newly-harvested greens and exquisite salad sauces, freshly-shucked oysters and premium cold cuts and cheese stations, as well as terrines, rillettes and breads.
