Ube Mamon

Everyone’s favorite fluffy Mamon (FIlipino Sponge Cake) gets an upgrade with Ube flavoring. Try this kitchen-tested Mamon Recipe for a no-fail snack at home.

Ube Mamon

Ingredients

  • 1 cup MAYA Cake Flour sifted
  • ¼ cup ube powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons sugar
  • 1/4 cup vegetable oil
  • 4 eggyolks
  • 6 tablespoons water
  • 1 tablespoon ube flavoring
  • 4 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar

Instructions

  1. Preheat oven to 350°Line 4-inch mamon molders with paper cups.
  2. Sift flour, ube powder, baking powder, salt, and sugar together in a bowl. Make a well at the center and add oil, eggyolks water, and flavoring mix until smooth. Set aside.
  3. Beat eggwhites with cream of tartar until soft peaks form. Add sugar gradually and continue beating until stiff but not dry. Fold in eggyolk mixture into the eggwhite mixture until thoroughly blended. Pour onto prepared molders.
  4. Bake for 20-25 minutes or until done. Cool inverted in a wire rack.
  5. Once cooled, brush with butter or margarine, sprinkle with sugar and grated cheese on top.

Yield: 12 pieces 4-inch mammon molds
