Ube Filled Doroyaki

 

UBE FILLED DOROYAKI

Ingredients

  • 1 piece medium-size egg
  • 2 tablespoons oil
  • 1 cup fresh milk
  • 1 pack MAYA Whole Wheat “Thinkheart” Pancake Mix 200g
  • 1 cup ube jam (store bought)

Instructions

  1. In a mixing bowl, beat together egg, oil, and fresh milk until well blended.

  2. Add pancake mix and continue mixing until mixture is smooth and free of lumps.

  3. Heat the frying pan over medium to low heat and lightly brush with oil.

  4. Scoop ¼ cup pancake batter and pour onto the preheated pan.

  5. Cook pancake until bubbly, flip pancake and cook the other side of the pancake for 45 seconds to 1 minute. Repeat procedure with the remaining pancake batter.

  6. In a clean plate, place 1 piece pancake and spread 1 to 1 ½ tablespoons of ube jam onto the pancake then sandwich with another pancake. Make sure to put a lot of ube jam at the center this will create a curve to your doroyaki shape. Serve.

Recipe Notes

NOTE:
• Replace ube jam with sweet red bean paste if you want an authentic Doroyaki
• Lessen the milk to ¾ cups if you prefer a thicker pancake

Cooking time: 10 to 15 minutes
Yield: 3 to 4 Dorayaki
