Tuna Fritters
Ingredients
- 1 180 g-can tuna flakes in oil
- ½ cup MAYA All-Purpose Flour
- ¼ cup MAYA Cornstarch
- ⅛ teaspoon baking powder
- 2 pieces medium-sized eggs
- 1 piece medium-sized carrot finely chopped
- 1 piece red onion chopped
- 3 cloves garlic minced,
- 1 bunch spring onions
- salt and pepper to taste
- Oil for deep frying

In a bowl, combine canned tuna (including the liquid), flour, cornstarch, baking

powder, eggs, carrot, onion, garlic, spring onions, salt and pepper. Mix well. (Note: add 1

more canned tuna, drained, to have more tuna meat in your fritters)

Heat enough oil in a pot for deep frying.

Using a spoon, scoop tuna batter mixture and carefully drop it onto the preheated oil. Cook tuna fritters in batches until golden brown and puffy.

Once tuna fritters are cooked, transfer them on a plate lined with paper towels to drain excess oil.

Serve with sweet chili sauce, sweet and sour sauce or any dip of your choice.
