The golden rule is that ripe, soft, full-flavored bananas make the best banana bread. Speckled bananas are great, but blackened bananas are even sweeter. If you only have fresh bananas on hand, simply bake unpeeled bananas on a baking sheet at 150C for 30-40 mins or until the skins turn black, then cool, peel and start baking.
