Sapin Sapin


  • 2 cups glutinous rice flour
  • 2 cup rice flour
  • 1 1/3 cup sugar
  • 4 cups thin coconut milk
  • 1 teaspoon vanilla extract
  • Gel food coloring as desired


  1. In a bowl, mix flour, sugar, coconut milk and vanilla together.
  2. Divide mixture in 4 small bowls, tint the mixture with desired colors, make sure you color them one shade lighter than the color you want to achieve, they will still darken.
  3. Brush a 9-inch dish with coconut oil and place a very fine cheesecloth on the dish. Pour one color of the mix in the bottom of the pan.
  4. Steam for 20-25 minutes or until set. Pour in the next layer of sapin sapin mixture over the first layer and then steam again until set. Repeat this procedure until you’ve used up all the rice flour mixture.
  5. Remove from the steamer and cool slightly.
  6. Cut into desired servings, top with toasted grated coconut.
