Pork Chicken Adobo

  • 1 kilo pork belly (liempo), cubed or chicken
  • 1/3 cup vinegar
  • 2 tablespoons crushed garlic
  • 1 piece bay leaf
  • 2-3 tablespoons soy sauce
  • 1/2 teaspoon peppercorn
  • water
  • 1 tablespoon oil


  1. Combine pork or chicken with a mixture of vinegar, 1 tablespoon garlic, bay leaf, soy sauce and peppercorn.
  2. Boil then simmer uncovered for about 10 minutes or until almost tender.
  3. If mixture is dry, add about ½ cup water. Simmer covered until completely tender.
  4. Sauté remaining garlic in hot oil until brown. Add meat and fry until brown. Add adobo sauce.
  5. Another way to prepare adobo is to first brown the pork or chicken in a little oil before adding in the vinegar, garlic, bay leaf, soy sauce, peppercorn and water.
