Pineapple Upside Down Cake


½ cup butter
¾ cup brown sugar
6-8 slices pineapple
maraschino cherries
1 cup sifted MAYA Cake Flour
1 teaspoon baking powder
¼ teaspoon salt
5 pieces egg yolks
2 tablespoons cold water
1 teaspoon vanilla
½ cup sugar
5 egg whites
½ cup sugar


  1. Preheat oven to 350F.
  2. Melt butter in an 8 inch round pan. Over this, sprinkle the sugar then arrange the pineapple slices and maraschino cherries. Set aside.
  3. Sift flour, baking powder and salt. Set aside.
  4. Beat egg yolks with cold water and vanilla until thick.
  5. Gradually add sugar and beat until lemon-colored.
  6. In a separate bowl, beat egg whites until soft peaks form.
  7. Add sugar and continue beating until stiff.
  8. Fold egg yolks alternately with flour mixture into beaten egg whites.
  9. Pour into prepared pan. Bake for 20 to 25 minutes. Invert on a serving platter.
