½ teaspoon extra virgin olive oil
½ teaspoon shallots, chopped
2 tablespoons tri-colored bell peppers, diced
½ teaspoon fresh basil leaf, chopped
1/8 cup broccoli florets, chopped
1 egg white
2 pieces MAYA Original Hotcake Mix Waffles
1 piece medium-size egg
2 tablespoons oil
1 cup water
1 package MAYA Original Hotcake Mix, 250g
In a large non-stick pan, heat oil over medium heat. Add shallots and cook over medium heat. Stir occasionally.
Add the bell peppers and basil and cook for about two minutes. Add the broccoli and continue to cook for an additional two minutes. At this time the broccoli should be soft and a beautifully bright green color. Add the egg whites and cook just until soft. Place the egg whites and veggies on the toasted waffles. Serve.
To prepare waffles: Lightly grease a waffle iron then preheat. In a bowl, beat egg then add oil, water and hotcake mix. Stir just until blended. When waffle iron is hot, pour in batter. Cook for 2-3 minutes or until golden brown. Serve with butter and syrup if desired.
