Mocha Mamon


  • 6 pieces egg yolks
  • 1 tablespoon instant coffee powder dissolved in half cup of water
  • ½ cup oil
  • 1 teaspoon vanilla extract
  • ½ cup sugar
  • 2 cups MAYA Cake Flour
  • ½ teaspoon salt
  • 1 tablespoon baking powder
  • 6 pieces egg whites
  • 1 teaspoon cream of tartar
  • ½ cup sugar
  • softened butter for brushing
  • sugar for topping


  1. Preheat oven to 350F.

  2. In a bowl, sift together cake flour, salt, sugar and baking powder. Stir in water, egg yolks, vanilla and oil. Set aside.
  3. In a mixer bowl, whip egg whites with cream of tartar. Once foamy, gradually add in other ½ cup of sugar. Continue whipping until it forms stiff peaks.

  4. Carefully fold whipped egg whites to the cake batter until it is well incorporated. Do not overmix.
  5. Pour into prepared mammon molds.
  6. Bake in the oven for 20-25 minutes.

  7. Brush with softened butter and sprinkle with sugar. Serve.
