Mango Cake

INGREDIENTS

Cake:
1 pack MAYA Oven Toaster Banana Cake Mix 230g
150 grams chopped ripe mangoes

 

Mango Puree Topping:
150 grams ripe mango
1/2 cup sugar
1 tablespoon fresh lemon juice
pinch of salt
4 egg yolks
1/4 cup unsalted butter, cut into small pieces
1 cup whipped cream, chilled

PROCEDURE

Prepare 1 box MAYA Oven Toaster Banana Cake Mix according to package direction. Substitute mango for banana in the ingredients and use 4 ensaymada molder instead of loaf pan. Bake as per package direction, 2 molders at a time. Set aside. Prepare toppings, blend first 4 ingredients. Add egg yolks; puree for 15 seconds longer. Cook puree until smooth and thickened. Whisk in butter, 1 piece at a time. Cool. Mix in the chilled whipped cream. Use as icing for mango cake. Decorate as desired.
