Lemon Tart

INGREDIENTS

Crust:
1 cup MAYA All–Purpose Flour
1/4 teaspoon salt
1 tablespoon sugar
1/4 cup butter
1 piece egg yolk, reserve egg white for other usage
1 tablespoon water

Filling:
2 whole eggs
1/2 cup sugar
1 teaspoon lemon peel
2 tablespoons lemon juice
1/4 teaspoon baking powder
confectioner’s sugar for dusting

PROCEDURE

Preheat oven to 350 degrees F.Prepare crust: Sift together the flour, salt and sugar. Cut–in the butter then add the egg yolk if necessary, add enough water to form a ball of dough. Roll out dough to 1/8 inch thick and cut to fill tart molders or divide dough into 24 small balls and press to fit molders. Pre–bake for 20 minutes or until done.

Prepare filling: Beat eggs until fluffy. Add the sugar, lemon peel, lemon juice and baking powder. Pour over pre–baked crust and bake again for 20 minutes or until the center has set. Cool. Sprinkle with confectioner’s sugar.
