1 2/3 cups MAYA All–Purpose Flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
1 cup sugar
2 large eggs
2 teaspoons grated lemon peel
1/2 cup fresh milk
Preheat oven to 350 degrees F. Lightly grease 8 1/2 x 4 1/2 x 2 1/2–inch loaf pan. Sift flour, baking powder and salt in a medium bowl to blend. Set aside. Using electric mixer, cream butter and sugar in a large bowl until light and fluffy. Beat in eggs, 1 at a time. Add grated lemon peel. Mix in flour mixture ingredients alternately with milk. Pour batter into prepared loaf pan. Bake until tester inserted into center of bread comes out clean, about 1 hour.
Transfer lemon bread to rack. Cool lemon bread in pan completely on rack. Wrap with plastic wrap. Chill until ready to serve. To serve, re–heat in the oven.
