HUMMUS BREAKFAST TOASTIE w/ BALSAMIC GLAZE

Ingredients

  • 1 piece whole French batard bread, sliced diagonally
  • extra virgin olive oil
  • prepared hummus spread
  • arugula green leaves
  • grilled cherry tomatoes
  • Feta herb cheese
  • alfalfa sprouts
  • prepared balsamic glaze

Instructions

  1. Drizzle olive oil on both sides of batard slicesthen toast or pan grill.

  2. Spread hummus generously on bread and arrange on top the arugula,grilled cherry tomatoes, feta cheese and alfalfa sprouts.

  3. Drizzle top with balsamic glaze.

Hummus Recipe

Ingredients

  • ½ cup prepared tahini paste (100g toasted sesame seeds + 2 tablespoons oliveoil + 1 tablespoon honey)
  • 3-4 cloves cloves
  • olive oil, as needed
  • salt and pepper to taste
  • salt and pepper to taste
  • 1/4 teaspoon each of spices (cumin, paprika and coriander)
  • 1 cup chick peas, boiled or in can
  • ¼ cup water

Instructions

  1. Prepare hummus by blending together the tahinipaste, garlic, olive oil, salt and pepper, lemon juice and spices in a foodprocessor until well blended.  Add in thechick peas and put 1 tablespoon of water one at a time while continuing theprocess of blending until it reaches a smooth creamy consistency.  Store in cool, clean and tightly sealedcontainer.
