Using the wrong recipe for the kind of brownies

Some people prefer their brownies to be more cake-like, and some prefer them to be on the fudgier side. But each has different way of baking. For example, fudgier brownies would need a recipe that has higher chocolate and butter-to-dry ingredient ratio than cake-like ones

Not letting the chocolate cool after melting

When you’re melting chocolate for your brownies, make sure to let the hot melted chocolate cool before adding in to your mixture to avoid cooking your eggs. Make sure to also bring your eggs and butter to room to room temperature before combining them to get a smoother batter.

Going overboard with add-ins

Let chocolate be the star of the brownies. Don’t overload your recipe with too much add-ins like nuts, cream layers or peanut butter.
