Garlic Parmesan Fried Chicken


  • 1/2 kilo chicken cut into serving pieces
  • 3 tablespoons minced garlic
  • 1 cup milk
  • 1 tablespoon paprika
  • salt and pepper

For Breading:

  • 1/2 cup MAYA All-Purpose Flour
  • 1/2 cup MAYA Cornstarch
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons smoked paprika
  • 2 tablespoons garlic powder
  • salt and pepper
  • 3 pieces egg beaten
  • oil for deep frying
  • 2 tablespoons oil
  • 1/2 cup clarified butter
  • 1 to 2 tablespoon/s garlic finely chopped
  • 1/4 cup grated parmesan for toppings
  • chopped parsley


  1. Put chicken cut-ups in a bowl and marinate it with garlic, milk, paprika, salt and pepper. Marinate for at least 3 to 4 hours or overnight.
  2. In a separate bowl, mix all the ingredients for breading, except the eggs and oil. Mix well. Set aside.
  3. Heat oil in a deep-frying pan over medium heat.
  4. Drain milk marinade using a colander and let the marinated chicken pieces dry a bit, then dredge chicken with the parmesan - flour breading mixture and dip the dredge chicken into the beaten eggs, then dredge it again with parmesan – flour breading mixture.
  5. Deep fry the dredged chicken into preheated oil until golden brown. Set aside.
  6. In a separate pan, pour oil and clarified butter over medium heat, once butter is melted fry garlic until golden brown. Turn off the heat then add the fried chicken to the pan and add parmesan cheese and chopped parsley. Gently toss the fried chicken until all the chicken is coated with parmesan cheese. Serve.
