Egg Nuggets

INGREDIENTS

2 tablespoons butter
1/3 cup Maya All–Purpose Flour
1 cup milk
4 eggs, hard boiled then chopped
1/2 cup chopped bacon
salt and pepper to taste
1/3 cup Maya All–Purpose Flour
1 egg beaten
1/3 cup bread–crumbs
oil for frying

PROCEDURE

In a saucepan, melt butter then add flour. Cook for a minute then gradually pour in the milk. Cook until thick. Add chopped eggs and bacon. Season to taste. Let cool then form into 12 oval–shaped nuggets. Roll nuggets in flour then dip in beaten egg. Dredge with bread–crumbs. Heat oil in deep fryer. Fry nuggets until golden brown. Drain. Pack with catsup and accompany with pasta salad.
