Date Meringue Cake

  • 1 cup dates
  • 2 tablespoons suagr
  • 3/4 cup water
  • 1/4 cup chopped nuts
  • 1 package MAYA Decadence Devil’s Food Cake Mix 550g
  • 1/2 cup butter softened
  • 1 piece egg
  • 6 pieces egg whites
  • 1/2 teaspoon cream of tartar
  • 1 cup sugar


  1. Preheat oven to 350°F/177°C. Grease and flour a 9-inch round pan. Set aside.
  2. In a saucepan, combine dates, sugar and water. Cook until thick. Add nuts. Cool and set aside.
  3. In a bowl, combine the cake mix, butter and egg. Press mixture evenly in the prepared pan. Pour dates mixture. Bake in a preheated oven for 20 to 25 minutes or until cake is done. Cool.
  4. Prepare Icing: In a mixer bowl, beat egg whites with cream of tartar. Add sugar, beat until mixture reaches stiff peak stage. Spread meringue on filling forming spikes. Quickly bake just until golden brown
