Classic Mocha Butter Cake

INGREDIENTS

1 pack MAYA Oven Toaster Butter Cake Mix 200g
1/4 cup butter
2 whole eggs
1/2 cup water

Butter icing:

1 1/2 teaspoons instant coffee powder
1/4 cup fresh milk
1/2 cup butter
1/3 cup sugar

PROCEDURE

Grease and line a 3 x 9–inch loaf pan or 6–inch round pan. Set aside.

In a bowl, cream butter until light and fluffy. Add egg and water. Continue beating until blended. Add butter cake mix. Stir until smooth. Pour in prepared pan and cover loosely with aluminum foil. Bake in an oven toaster for 10–15 minutes. When done, turn pan sideways and bake for another 10–15 minutes or until done. Cool completely.

Prepare Butter Icing: Combine sugar, coffee and milk. Stir to dissolve. Set aside. Beat butter and sugar until light and fluffy. Add milk mixture gradually in the butter mixture continuously beating until mixture forms into soft peaks. Frost preprared cake. Decorate with chocolate bits if desired.
