Chia Oatmeal Raisin Cookies
Servings 2 dozen cookies (approximately)
- 1 2/3 cups MAYA All-Purpose Flour
- 1 teaspoon Cinnamon Powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butter softened
- 1/2 cup white sugar
- 1/2 cup brown sugar packed
- 1/4 cup honey
- 1 piece egg
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup chia seeds soaked
- 1 cup raisins
Preheat oven to 350ᵒF/177C. Line a cookie sheet with baking paper.
Set aside. Sift together the flour, cinnamon powder, baking soda, and salt. Set aside.
Cream the butter, white sugar, brown sugar, and honey until fluffy. Beat in egg and vanilla.
Add the flour mixture and mix until well incorporated. Fold in the oats, raisins, and chia seeds.
Scoop or spoon batter onto the prepared cookie sheet. Make sure that there is at least a 2-inch space in between cookies because they will spread during baking. Bake for 15-18 minutes until evenly golden brown.
Allow to cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.
