Beer Battered Fish And Chips

  • 3 pieces fresh sole fish fillet washed and cleaned
  • 2 tablespoons lemon juice
  • 2 tablespoons chopped dill
  • salt and pepper
  • MAYA All-Purpose Flour for dredging

Beer Batter Mixture:

  • 1/2 cup MAYA All-Purpose Flour
  • 1/2 cup MAYA Cornstarch
  • 1/4 teaspoons baking powder
  • 1/2 teaspoon Spanish paprika
  • 1 teaspoon chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons chopped dill
  • salt and pepper
  • ¾ to 1 cup cold beer
  • 3 to 4 pieces medium-size sweet potato thinly sliced and dried

  1. Cut fish fillet diagonally and slice it into strips with 1-inch wide strips.
  2. Marinate sliced fish into lemon juice with dill, salt and pepper, for at least 15 minutes to 30 minutes.
  3. Prepare beer batter mixture: In a bowl, mix flour, cornstarch, baking powder, paprika, chili powder, garlic powder, onion powder, dill, salt and pepper. Mix well, then add beer. Mix until well blended. Set aside.
  4. Heat oil in a pot over medium heat, enough for deep frying.
  5. Drain marinade from the fish fillet, then dredge fish fillet in flour, then dip the dredge fish fillet into the beer batter mixture, then fry it right away over the preheated oil. Fry until golden brown. Transfer fried fish in a plate with paper towel to remove excess oil. Repeat procedure until all the fish fillet has been fried.
  6. Using the same oil, fry dried sweet potato until crisp. Remove sweet potato chips, then season with salt.
  7. Serve Fish and chips together with prepared dip of your choice.
