Apricot Wheat Bars


¼ cup butter¼ cup sugar
2 tablespoons lightcorn syrup
1/8 cup eggwhites (approx. 1 piece egg white)
2 tablespoons water
1 package MAYA Whole Wheat Hotcake Mix 200g
1 teaspoon gingerpowder
1 teaspoon cinnamonpowder
½ cup coarselychopped dried apricots
½ cup coarselychopped pecan nuts or walnuts


1. Preheatoven to 375°F/191°C.
2. Grease and line a9” x 4” x 1” square pan.  Set aside.
3. Cream butter and sugar until light andfluffy, add light corn syrup, egg whites and water, mix until blended.
4. Sift hotcake mix, ginger powder and cinnamonpowder. Add to creamed mixture. Mix until smooth.
5. Incorporate dried apricotsand nuts.
6. Pour onto prepared pan, spreadevenly then bake for 30-35 minutes.
7. Cool then cut into bars.
