Preheat oven to 350⁰F/177⁰C. Line 9 inch square pan with baking sheet. Set aside.

Cube the apple and put in a medium size pot. Add water, cinnamon and honey. Bring to boil in medium heat. Cover pot with cut wax paper. Poach apple for 30 minutes.

Remove poached apple from the sauce and reduce the sauce until it thickens. Set aside.

In a clean bowl, mix pancake premix, butter, milk and egg. Mix well.

Add poached apple, cut and fold.

Transfer the apple pancake mixture to the prepared square pan.

Bake for 25 to 30 minutes or until toothpick inserted in center comes out clean.

Remove baked apple pancake and let it cool. Cut it into bars, pour the reduced apple sauce, and serve.
