INGREDIENTS
1 cup MAYA All-Purpose Flour
1/3 cup brown sugar, packed
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 egg
½ cup milk
1/3 cup vegetable oil
2 teaspoons vanilla extract
yellow food color, as needed
melted butter, as needed
PROCEDURE
Preheat oven to 450°F/232°C. Grease 2 one ounce-muffin pans. Set aside.
In a bowl, combine flour, brown sugar, baking powder, baking soda and salt. Set aside. In another bowl, whisk together egg, milk, vegetable oil, vanilla extract and yellow food color until smooth. Add the mixture to the dry ingredients and stir until everything is incorporated. Scoop batter into the muffin holes until 2/3 full. Once the pans are in the oven, lower the temperature to 375°F / 191°C. Bake for 10-12 minutes or until edges are brown. Brush with melted butter. Remove from muffin pans and cool.

NOTES
Two or three ounce-muffin pansmay also be used to yield bigger muffins.
