Preheat oven at 300⁰F. Grease and dust with flour a mini loaf pan

In a medium-sized bowl, mix canola oil, eggs and water. Add in pancake mix. Mix well, until there are no lumps. Gently fold in glazed fruits.

Pour onto prepared pan. Bake for 15-20 minutes.

While the cakes are baking, prepare the brandy syrup.

In a sauce pan, mix the sugar and water. Heat until sugar is dissolved. Once simmered remove from the heat then add in brandy.

Remove cakes from the oven. While they are still hot, brush the cakes with the prepared syrup.

Let the cakes cool. Transfer in an airtight container.

Age for a few days and re-brush with the brandy syrup.
