Ingredients
- 1 slab pork ribs, cleaned and pot dry
rock salt and pan roasted whole peppercorns, crushed
Marinade:
- 1 ½ cups water
- 1 ½ cups Coke or Sprite
- 3 tablespoons garlic, crushed
- 2 pieces onion, finely chopped
- ¼ cup cider vinegar
- ¼ cup honey
- 1/3 cup brown sugar
- 3 tablespoons Worcestershire
- 3 tablespoons lemon juice
- 2 tablespoons paprika
- 1 tablespoon chili powder
- 1 teaspoon crushed peppercorns
- 2 teaspoons iodized salt
- 2-3 teaspoons hickory liquid smoke
Instructions
- Place the pork ribs on a clean tray and give the meat a good prick. Then rub with salt and pepper. Set aside.
- In a pot, combine all the ingredients for the marinade. Mix it well until fully combined. Bring the mixture to a boil and let it boil for 3 to 5 minutes. Turn off the heat and let the marinade or sauce cool down.
- Once the marinade cools down, marinate the seasoned pork ribs with the mixture for at least an hour or so. Overnight marinating is always the best.
- Remove the pork from the marinating liquid and place it on a rack over a baking tray. Place in a preheated oven at 350°F-375°F and roast for 30-40 minutes.
- Basting the pork from time to time with the marinating liquid and oil. Continue roasting for another 30 minutes until the pork is tender.
Recipe Notes
- To thicken the marinade, continue cooking the sauce into simmering stage until the liquid reduces.
