Air Fried Coconut Prawns
Ingredients
- 10 pieces prawns shelled and deveined
- Salt and pepper
- 1 teaspoon paprika
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- ½ cup MAYA All-Purpose Flour
- ¼ cup MAYA Cornstarch
- 3 to 4 pieces eggs beaten
- ½ cup desiccated coconut
- ¾ cup panko bread crumbs
CHILI SAUCE
- 1/2 cup sweet and chili sauce (store bought)
- 3-4 tablespoons brown sugar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon chili powder
- ¼ teaspoon paprika
- 1 tablespoon butter
Instructions

In a clean bowl, season prawns with salt, pepper and paprika. Gently toss the prawns with the seasonings.

Add lime juice and olive oil and again gently toss the prawns until all the prawns are covered with the marinade. Marinate prawns for 30 minutes.

In a separate bowls, mix flour and cornstarch. Set aside.

Then mix desiccated coconut and panko bread crumbs in another bowl.

Drain the prawn marinade using a strainer, then dredge prawns with the flour mixture, then dip into the beaten eggs, then dredged it to the desiccated coconut mixture. Dip it again to the beaten egg and back to the desiccated coconut for double coating.

Place the desiccated coconut covered prawns into the air-fryer and air fry it for 5 to 6 minutes at 180⁰C.

Transfer air fried coconut shrimp into a serving plate and serve.
Chili Sauce

In a sauce pot, mix all the ingredients until well mix. Bring to boil the mixed sauce over medium to medium-low heat. Once boiling, lower down the heat and let it simmer until the sauce thickens up. Turn-off the heat and let it cooldown. Serve as a dipping sauce.
