Heat oil in a medium-sized stock pot over medium heat.

Sauté onion and garlic, then add whole black pepper and bay leaf.

Add pork and sauté until the pork turns to brown color.

Add water and soy sauce, stir and let it boil, with occasional stirring.

Then add the vinegar, but do not stir. Let it boil first for around 1 to 2 minutes, before stirring.

Let it boil until the meat is tender and the adobo sauce, almost dries out.

Then add the coconut milk and stir. Let it boil for around 1 to 2 minutes, then put in a simmering stage until the sauce is reduced to your desired consistency.

Turn the heat off and transfer in a serving bowl and topped it up with red chilies.
