Thank you for the inquiry sir. Technically, a pancake is different from a waffle because the former is softer and more cake-like, while the latter is meant to be crispy on the outside and light and airy on the inside. One trick to get that crispy effect is to separate the eggs and beat the whites to stiff peaks. Then gently fold them in at the end. 🙂
