  • 3 cups MAYA All-Purpose Flour
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ teaspoons baking powder
  • ½ cup cheddar cheese diced
  • ½ cup gruyere cheese diced
  • ¾ cup sliced black forest ham or any brand of choice chopped
  • ¼ cup fresh chives minced
  • 10 tablespoons unsalted butter melted
  • ½ cup buttermilk

  1. Preheat oven to 425°F/215°C.
  2. In a large mixing bowl, combine the flour, baking soda, salt and baking powder.
  3. Add the cheeses, ham, and chives to the dry mixture and combine thoroughly.
  4. Make a well in the center of the dry ingredients, and pour the butter and buttermilk into the well.
  5. With clean hands, combine the ingredients until the dry mixture is moistened, do not knead.
  6. Turn the mixture onto a floured surface and gather the dough together.
  7. Gently pat the dough to make a disk about 1 ½ inches thick.
  8. Using a 3 inch biscuit cutter, cut as many scones as you can and lay them on a nonstick, parchment lined baking sheet.
  9. Gather the remaining dough lightly and cut out more scones, making sure you are gentle, do not knead.
  10. Bake the scones for about 12 minutes or until lightly browned.
  11. Serve with scrambled eggs and jam, if desired.
