Party Cookie Sandwich

  • ½ cup butter unsalted
  • ½ cup peanut butter
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • 2 pieces eggs
  • 1 pack Celebrations by Sharon Party Cupcake Mix 200g
  • 1 cup slivered almonds

Salted Caramel Frosting:

  • ½ cup butter, unsalted
  • 3 cups confectioners’ sugar
  • ½ cup caramel syrup


Prepare Cookies:

  1. Preheat oven to 350ᵒF/177ᵒC. Grease and line two cookie sheets.
  2. Cream together butter, peanut butter and sugars. Beat in the eggs.
  3. Mix and stir in the almonds.
  4. Using a #27 ice cream scooper, scoop batter and transfer into cookie sheets.
  5. Bake for 7-10 minutes or until edges are slightly brown.

Prepare Caramel Frosting:

  1. Cream butter.
  2. Add confectioners’ sugar and caramel syrup alternately.
  3. Beat until smooth and fluffy.


  1. Pipe out frosting on cookies. Use a star piping tip.
  2. Cover with another cookie.
