Apple Pie Cookie Treats

INGREDIENTS

Pie Crust
2 cups  MAYA All-Purpose Flour
½ teaspoon  salt
1 teaspoon sugar
½ cup  butter
¼ cup shortening
5-6 tablespoons  cold water

Filling
2 tablespoons butter or margarine
¼ cup sugar
1/8 cup MAYA All-Purpose Flour
1/4 teaspoon  ground cinnamon
1/4 teaspoon ground nutmeg
pinch of salt
¼ cup thinly sliced peeled tart apples

Caramel Sauce
1 piece egg, for egg-wash
2 tablespoon  cinnamon or granulated sugar
1 tablespoon nutmeg

PROCEDURE

Pre-heat oven to 350F. Grease and line one cookie sheet.

For the Pie Crust:  Mix together flour, salt and sugar. Cut in the butter and shortening with a pastry blender or using a fork. Add cold water, 5 tablespoons first, making sure that it forms into an intact dough. Roll out the dough, using a round cookie cutter (about 3 inches diameter). Transfer round pieces to the cookie sheet. Set aside.

Roll out the remaining dough and cut again round pieces equivalent to the first batch prepared. These will be the cover of the pie cookies.  You make use a star (or any shape) plunger to design the cover.

For the Filling: In a small sauce pan, melt the butter. Add the sugar, flour, cinnamon, nutmeg, salt and apples. Cook until sauce is thick. Set aside to cool.

For the Caramel Sauce: Beat together  egg, cinnamon, and nutmeg.

Assemble:  Put a teaspoonful of filling to the prepared round doughs. Cover it with the second batch of prepared round doughs.

Bake for 15-20 minutes until lightly brown. Brush egg wash on top and place back to the oven for about 2-3 minutes.
