“Eye Can See You” Cake

INGREDIENTS

1 cup + 1 tablespoon water 3 pieces eggs, separated 1/3 cup vegetable oil 1 pack MAYA Decadence Yellow Cake Mix 520g Buttercream Frosting: ½ cup unsalted butter ½ cup shortening 1/8 teaspoon salt 3 tablespoons fresh milk ¼ teaspoon vanilla extract ¼ teaspoon cinnamon extract 3 cups powdered sugar Marshmallow Fondant: 1 tablespoon shortening 1 cup white miniature marshmallows 1 ½ teaspoons  water 1 cup confectioners’ sugar food color strawberry syrup black food gel color

PROCEDURE

Preheat oven to 350°F/177°C.  Grease and line two 8-inch round pans. Set aside. PrepareCake:  In a bowl, combine the water,egg yolks, oil and mix.  Set aside. In another mixer bowl beat egg whites until stiff. Fold in into the egg mixture then pour onto prepared pans.  Bake for 25-30 minutes or until cake is done. Unmold and cool in wire rack. Preparefrosting:  Using a mixer bowl, cream butter and shortening.  Add in salt, milk and extracts. Slowly incorporating powdered sugar to the butter mixture.  Continue mixing at medium speed until mixture becomes fluffy.  Add milk, if necessary to achieve the desired consistency. Set aside.  Prepare Fondant: Brush the bowl and rubber scraper or wooden spoon with shortening. Set aside.  In a bowl over simmering water, melt marshmallows with water. Once melted, pour the melted marshmallows on a confectioners’ sugar dusted work surface and knead gradually. The fondant is ready when it is firm enough and formed into a ball.  Make two balls as big as a ping pong ball to be used for the eyes and get a little portion of the fondant and color it with black and form into small black rounds. To Assemble: Get one piece of cake and put frosting on top then layer with another cake. Using a grass tip, pipe frosting on the entire cake to create hair-like design.  Arrange the 2 fondant balls at the center of the cake, put a little black fondant at the center of the fondant balls to create eyes and pipe strawberry syrup to create veins.  Arrange in twos, small black fondant balls in different parts of the cake to create watching eyes.
