You cannot talk about the local culinary cuisine without mentioning the name Chef Gene Gonzalez. He is the latest guest chef for The Maya Kitchen’s Culinary Elite Series on February 6,Saturday, 9am-1pm.

Chef Gene will regal his audience with recipes like Adobo del Diablo (Capampangan Adobo) with a deep bronze produced by constant simmering and deglazing of the pan with stock when a crust is formed; Menudo Sulipeña (Oxtail Stew), slow simmered dish of oxtail, ham and chorizo Bilbao with a dash of brandy; Pato Al Caparas (Duck with Capers) is simmered and braised duck with ham, liver and capers; Pasta Juan, chewy and buttery coconut bars; and Princess Cake, layers of freshly baked butter cake iced with buttercream with peach and strawberry puree and a ‘secret’ dose of Cointreau and coffee.

Chef Gene is a culinary school founder and chef instructor. He is owner and president of the iconic Café Ysabel, popular among discerning diners and Gino’s Fine Dining which is now taking its place among top eating destinations. His Center for Asian Culinary Studies has elevated the standards of culinary education and produced talented chefs.

Chef Gene also finds the time to do food styling, recipe research and development and food consultancies for hotels and restaurants. He is also an authority on wine and coffee.

He pioneered gourmet cooking on local TV and until recently had a show, Gene’s Cuisine on the Lifestyle Network. He writes a weekly column and has published and authored numerous culinary books.
