Caramelized Onion & Bacon Logs

Ingredients

  • 100 grams bacon coarsely chopped
  • 2 tablespoons olive oil
  • 100 grams white onion, sliced
  • 2 tablespoons sherry wine

Cupcake base:

  • 1 piece egg
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 1 box MAYA Original “Fluffy n’ Tasty” Hotcake Mix 200g
  • 50 grams chives, chopped

Instructions

  1. Preheat oven to 350°F/177°C.
  2. Brush and grease small waffle machine or Twinkies pan with little oil. Set aside.
  3. Cook bacon slightly in a pan and set aside to cool.
  4. In another small pan, saute’ onions in olive oil until translucent then add sherry wine and continue cooking the onions until light brown and soft. Set aside.
  5. In a bowl, whisk together egg, water and oil. Blend in the hotcake mix and add in the chives, caramelized onions and bacons.
  6. Pour batter into prepared pans and bake for 10-15 minutes or until done.
