Belly Good Lechon Kawali

Ingredients

  • 1 kilo whole pork belly,
  • 1 bulb garlic crushed
  • 2 pieces bay leaves
  • 1/2 tablespoon black peppercorns
  • salt water, enough to submerge pork belly
  • 2 inches deep oil, for deep-frying

Instructions

  1. In a pot, boil together the pork belly, garlic, bay leaf, and black peppercorns.
  2. Simmer for 1 hour or until fork-tender.
  3. Strain out and air dry for at least 2 hours and then slice into 3-4″ thick pieces.
  4. Arrange on a rack, season with salt, and let dry for another 2 hours or keep in the freezer overnight.
  5. Deep-fry until crispy then chop into pieces.
