Bacon and Cashew Cookies

INGREDIENTS

1 cup butter, softened
¾ cup granulated sugar
1 piece egg yolk, beaten
2 teaspoons vanilla extract
2 cups MAYA All-Purpose Flour
pinch of salt
¾ cup chopped, cooked bacon, lightly brown
¾ cup finely chopped cashew

 

PROCEDURE

Preheat oven to 375°F/177°C. Grease and line 2 baking sheets.

Cream butter and sugar in a large bowl until light and fluffy. Add in the egg yolk, vanilla extract, flour and salt, continue mixing until well blended. Add chopped bacon and cashew nuts. Mix thoroughly, until well blended.

Roll out the dough until 1/4 inch thick, and cut dough using Christmas-themed cookie cutters. Place each cut out cookie dough on the prepared cookie sheets. Bake for 15 minutes or until lightly brown. Cool on the baking sheets for another 5 minutes, then transfer to a wire rack to cool completely.

For variation: You may cover the baked cookies with melted chocolate or white icing (mixture of 1 piece egg white, 2 cups confectioners’ sugar and ½ tsp vanilla extract) decorate with Christmas-themed candy sprinkles and edible gold flakes.
